For Horizon West residents, standout dining does not always require a long drive or a resort stay. Located down the road at the Hyatt Regency Grand Cypress, Four Flamingos offers an elevated culinary experience rooted in Florida flavors, thoughtful technique and a setting that feels airy and inviting.


Led by Chef Richard Blais, Four Flamingos blends fresh-caught seafood, fire-grilled meats and tropical influences into a menu inspired by the state’s seasons and natural beauty.


Recently, we attended a media preview that offered a look at both dining service and a cocktail class experience, providing a fuller picture of what makes Four Flamingos one of Central Florida’s most celebrated dining destinations.



A First Impression: Light, Open and Unmistakably Florida

From the moment you enter, Four Flamingos feels bright, open and distinctly Florida. High ceilings, natural materials and natural lighting create a polished, intimate atmosphere ideal for date nights and celebratory evenings.


The screened porch and waterfront-style seating extend the dining area visually, allowing guests to feel connected to Florida’s natural beauty while enjoying a refined indoor setting.


The dining room’s design encourages guests to settle in and enjoy the meal at a comfortable pace. The space reflects the philosophy of the kitchen: elevated, approachable and connected to Florida flavors.

New Dishes That Celebrate Florida’s Range

The latest additions to the menu highlight Four Flamingos’ commitment to seasonality, sustainability and bold flavor combinations, offering something for every kind of diner.


Crab Cakes arrive crisp and golden, finished with herbed breadcrumbs and paired with apple chayote slaw and a pina colada aioli that adds brightness and subtle sweetness.


Flamingos Coconut Shrimp features local shrimp fried to a light crunch, complemented by pineapple relish, cilantro lime aioli and a drizzle of chili oil for gentle heat.


The Pork Belly is a rich and satisfying standout, glazed with pineapple rum and layered with jalapeño chimichurri, gochujang aioli and pickled pineapple and Fresno peppers. The balance of sweet, savory and spice makes it a dish that lingers in memory long after the plate is cleared.


Seafood takes center stage across the menu. Florida Black Grouper is paired with yuca gnocchetti, coconut paella cream, mussels, pea purée and roasted red peppers, offering depth and comfort while staying true to coastal roots.


The Snapper Ceviche is bright and refreshing, prepared with coconut leche de tigre, red onions and cilantro, making it an ideal start to a Florida evening.


Plant-based options receive equal care. Crispy Tofu with Jamaican curry, cauliflower, coconut rice, snap peas, red peppers and baby corn proves that vegetarian dishes here are just as layered and satisfying as their seafood and meat counterparts.

Cocktails That Match the Setting

Four Flamingos’ cocktail program reflects the same creativity and balance found in the kitchen. During the media preview, we were given a glimpse into one of the restaurant’s cocktail classes, which will continue monthly beginning in March 2026.


These classes give guests insight into the techniques, ingredients and inspiration behind the menu’s tropical and coastal cocktails.


Even during regular service, the attention to detail is clear. Drinks are vibrant, thoughtfully constructed and designed to complement the food while standing confidently on their own.


The restaurant also offers daily Happy Hour from 5 to 6 p.m. and Flamingo Hour from 9 to 10 p.m., making it an easy stop for a pre-dinner cocktail or a late-night bite after the theme parks. Signature offerings, including the playful liquid nitrogen oyster and pearls, add a sense of fun and surprise to the experience.

Save Room for Dessert: A Florida Finish

Dessert at Four Flamingos continues the restaurant’s celebration of local flavor, with one standout that perfectly captures its spirit. The Baked Florida dessert is a modern, theatrical take on a classic, featuring frozen Key lime pie paired with raspberry gelée and topped with flambéed meringue.


The contrast of cold and warm, tart and sweet, makes it a memorable way to end the meal. It feels indulgent without being heavy and distinctly Florida without feeling predictable.
