Acclaimed Chef Michael Mina Opens Steakhouse at Walt Disney World Swan and Dolphin

The highly anticipated Bourbon Steak Orlando is officially open at the Walt Disney World Swan and Dolphin, and reservations are now available.

The new signature restaurant from Michelin starred, James Beard Award-winning chef and restaurateur Michael Mina brings a modern, elevated steakhouse experience to the heart of Central Florida. Other Bourbon Steak locations can be found in Miami, Las Vegas, Los Angeles, New York, Washington, D.C. and beyond.

Living in Horizon West puts us just minutes from the world-class attractions that make Central Florida a culinary destination. With Bourbon Steak now open less than 30 minutes from home, residents have rare access to a dining experience typically reserved for major metropolitan cities.

Bourbon Steak Orlando is open for dinner from 5–11 p.m. daily.

Reservations are available at swandolphin.com/bourbonsteak or OpenTable.

Redefining the Classic Steakhouse Menu

The menu at Bourbon Steak Orlando honors classic steakhouse traditions while embracing bold, modern flavors. Every table begins with the restaurant’s signature duck fat fries served with a trio of house-made dipping sauces in place of traditional bread service.

Appetizers include Chef Michael Mina’s famous tuna tartare, prepared tableside with quail egg, pine nuts, mint, Asian pear and habanero-sesame oil. Other standouts are the rich black truffle agnolotti with burrata filling and truffle butter as well as bacon-wrapped scallops with cherry, turnip, Marcona almond and a madeira emulsion.

Shellfish and caviar selections set the tone for an indulgent meal, with chilled Gulf shrimp cocktail and buttery red Alaskan king crab among the offerings.

The steak selection features top-quality cuts like a 10-ounce filet mignon, a 22-ounce 45-day dry-aged cowboy ribeye and the showstopping 40-ounce hay-smoked tomahawk ribeye served tableside from a custom-designed trolley.

Wagyu lovers will find rare selections such as Miyazaki A5 strip steak and Snake River Farms domestic rib cap. Diners can enhance their entrées with accompaniments like black truffle butter, Béarnaise sauce or chimichurri.

Bourbon Steak's Notable Dishes, Seafood & More

Diners will find beloved Bourbon Steak classics like the iconic Maine lobster pot pie, presented tableside in a copper pot with lobster-brandy cream and market vegetables, and the slow roasted prime rib with a blue cheese popover, fresh horseradish and black truffle as jus in addition to the aforementioned Tomahawk steak.

Non-steak entrées are just as impressive, including big eye tuna au poivre with chanterelle wild mushrooms, wilted spinach and peppercorn sauce; and lighter options like the miso broiled sea bass with baby squash, shishito peppers and ginger dashi.

Side dishes are rich and satisfying, with standouts like black-truffle mac and cheese, creamed spinach topped with crispy shallots and jalapeño creamed corn with cilantro.

Desserts, Cocktails and Mocktails Not to Be Missed

Dessert is a true highlight, offering creative takes on classic flavors. The signature Bourbon Steak Chocolate Bar layers peanut butter crunch, chewy brownie and caramel mousse.

Other favorites include warm beignets with custard dips, a brûlée-topped Basque cheesecake with Florida strawberries and the playful “On the Rocks” root beer float with sassafras ice cream and walnut chip cookies.

The beverage program at Bourbon Steak Orlando complements the refined culinary offerings with a thoughtfully curated selection of wines, cocktails and spirits. The wine list features notable labels from Bordeaux and Burgundy alongside emerging producers from the Old and New World, chosen for their depth, personality and balance to pair perfectly with any dish.

The cocktail menu blends timeless classics with modern creativity and includes rare bourbons such as exclusive single-barrel selections. Signature drinks like the Our Famous Martini, made with Grey Goose vodka, Bombay Sapphire, lemon manzanilla sherry, dry vermouth and citrus essence, set an elegant tone while playful options like the tequila-based Fruit Ninja with yuzu, grapefruit and honey peach bitters add delight.

Non-alcoholic offerings are equally inventive, including the Fairweather Friend, crafted with Lyre’s London spirit, lime almond orgeat and cucumber Fever-Tree seltzer.

Signature Experience Calls for an Upscale Atmosphere

Located inside the Walt Disney World Dolphin, Bourbon Steak’s design is rooted in its surroundings, drawing inspiration from the local area to create a space that is both inviting and elevated with a touch of playfulness. Rich tones, contemporary lighting and elegant details offer a modern take on the traditional steakhouse that is sophisticated yet warm and tailored yet approachable. Every element, from curated art to the intimate layout, honors classic hospitality while embracing a fresh, refined aesthetic. It is the perfect spot for a celebratory night out, a romantic dinner or simply an extraordinary meal after a day in the parks. Complimentary valet and self-parking are available for all guests.

Bourbon Steak Orlando is one of the resort’s Signature Dining experiences, with a dress code that reflects its sophisticated setting. Guests are asked to wear clean, neat clothing free of offensive language and graphics. Swimwear is not permitted. The restaurant also offers private dining for business dinners, wedding parties or family gatherings. Whether formal or casual, the team, including the chef and certified sommeliers, can create a custom menu and provide personalized service.
