Maple Street Biscuit Company in Hamlin Set to Become Biscuit Belly
Hamlin Restaurant Will Remain Open and Transition Within the Next Two Years

A familiar Hamlin breakfast spot is expected to receive a new name and menu in the coming years.
Biscuit Belly has acquired 35 Maple Street Biscuit Company restaurants from Cracker Barrel, including the Hamlin location at 16027 New Independence Parkway. The company plans to transition the acquired restaurants to the Biscuit Belly brand over the next two years.
A company spokesperson confirmed to Horizon West Magazine, “The location will remain open and transition to a Biscuit Belly within the next 18-24 months.”
According to Biscuit Belly’s preliminary conversion schedule, the Hamlin restaurant is expected to make the change during the third quarter of 2028. The timeline is subject to change.
Once converted, the Hamlin restaurant will introduce Biscuit Belly’s chef-inspired menu, colorful interiors and Southern hospitality-focused experience. The Louisville-based brunch concept is known for gourmet biscuit sandwiches and creative takes on Southern comfort food.

Biscuits Built on Connection
Biscuit Belly began as a labor of love for husband-and-wife founders Chad and Lauren Coulter. The former pharmacists turned restaurateurs drew inspiration from the Southern cooking of their hometowns and their shared love of brunch. Working with executive chef Tavis Rockwell, they developed a menu offering inventive twists on Southern favorites, including a proprietary biscuit recipe that took three months to perfect.
The company’s story also centers on creating welcoming places where food brings people together. Biscuit Belly describes human connection as the heart of its restaurants, with an emphasis on good food, good people and good deeds. As the brand enters Hamlin, it says it intends to preserve the community connections established by Maple Street while investing in the restaurant’s existing team.

A Growing Southern Brand
Founded in 2019, Biscuit Belly currently operates 15 locations across the Southeast. The acquisition will more than triple its footprint and is expected to help the company grow to more than 60 restaurants by the end of 2028.
Cracker Barrel acquired Jacksonville-founded Maple Street Biscuit Company in 2019. According to the Jacksonville Daily Record, Biscuit Belly is acquiring 35 of Maple Street’s 51 remaining restaurants, while the other 16 are expected to close.
In addition to Hamlin, Central Florida locations in Celebration, O-Town West and Oviedo are included in Biscuit Belly’s conversion plans.
