Owners, John and Amy Dunham, Are Baking Their Way Into the Hearts and Homes of Horizon Westers!

Atlas Bakehouse is a home-based, cottage bakery with a passion for small-batch, hand-crafted baked goods. John and Amy's backgrounds in art and engineering have fueled their passion for the precision and creativity of baking. They believe that everything, sweet and savory, is best when crafted by hand using the highest quality ingredients.


We wanted to know all about how Atlas Bakehouse came to be. Here's a little bit of their history and a glimpse into the future for this dynamic duo!

How did Atlas Bakehouse get started? 

I (Amy) have loved to bake since I was a little girl, and after completing a baking apprenticeship several years ago in Washington, D.C., have had a dream of opening my own bakery. A move back to Florida and two children later, and the time was right for us to begin baking for others! 


We hope to move into local farmer's markets and a brick and mortar one day, but operating as a home-based cottage bakery works well for us right now with two small children. 

What is your background in the food world? 

Growing up, I spent much of my time baking with my mother and grandparents. Most of our vacations to visit family in Chicago and New England centered around visiting multiple bakeries a day - all beloved family favorites - and bringing back multiple boxes of treats to store in our freezer.


My passion continued throughout my college years, and trips to New York City, the Bay Area, and Europe piqued my interest in croissants and pastries especially. While my husband and I lived in Washington, DC, for a few years, I worked as an apprentice at Pluma by Bluebird,  an artisan bakery in the heart of the city, and learned how to bake in a professional kitchen from a brilliant and creative husband and wife team, Camila Arango and Tom Wellings. 

What do you specialize in? 

Our focus is on small-batch, hand-crafted breads, pastries, and baked goods - our menu changes seasonally, but includes a variety of cookies, scones, breads, croissants, bars, and other pastries. 


We believe that everything, sweet and savory, is best when crafted by hand using the highest quality ingredients. 


Each of our backgrounds bring different strengths to what we do - Amy's background in engineering has fueled her passion for precision and detail, which lends itself very well to the science and technique of croissants and pastry, while John's background in art has lent itself well to creative designs, ingredient combinations, and decorating baked goods. 

Why did you choose to focus in Horizon West? 

We were both raised in Central Florida (John in Winter Haven and Amy in Oviedo), and moved to Horizon West three years ago. 


As a home-based bakery, our primary market is Horizon West and neighboring areas such as Winter Garden, Windermere, and Ocoee. We love living in the Horizon West community, and look forward to building more relationships here as we grow!

What are some items you’ll be featuring for the holiday season?

For the holiday season, we are featuring a handful of seasonal items, including our White Christmas Cookie, Cranberry Orange Scone, Pear Gingerbread Loaf, Nana's Banana Cranberry Bread, Peppermint Bark Bars, and Glazed Cruffin. 


We look forward to baking for our neighbors and bringing a bit of holiday cheer to the end of this challenging year!

Atlas Bakehouse takes preorders for a limited menu available for pickup on Saturday mornings at their home in Horizon West. Their menu will change seasonally so don't wait to snatch up the holiday featured offerings!
